Arugula " Rocket" Recipe

Arugula, also called ‘rocket’, is a slightly spicy, delicate, leafy green. Although quite strong on its own, it’s a perfect addition to salads and sandwiches. It loses some of its spiciness in cooking, but can be prepared, much as spinach, by sautéing with olive oil and garlic.
Greens for breakfast are a great idea. Here’s a recipe for a Rocket And Gruyere Omelette
Serve with salad and crusty bread. Add more veggies if you like, such as chopped peppers and onions. Serves 4.
1 garlic clove, halved
1/2 tablespoons olive oil
5 oz rocket
6 eggs
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 lb Gruyere, cut into small cubes
Preheat your grill. Cook the garlic and oil in an ovenproof frying pan over medium heat, stirring occasionally, until they are golden, about 2 minutes. Remove the garlic and add the rocket. Cook, stirring, 1 to 2 minutes to wilt. Whisk together the eggs, salt, and pepper, then pour over the rocket and cook, undisturbed, over medium heat until almost set, about 5 minutes. Sprinkle the cheese on the top and place under the grill until eggs are just set and cheese is melted, 1-2 minutes.

CSA Launched
We have completed our materials and have been distributing them around the community.
If you are interested in learning more about our CSA for 2009/10 please check out our CSA link with an outline of what we have to offer.
This model provides us all with the opportunity to connect with each other and our food. We are excited to be 'your farmer'.
As for the farm. Josh just moved the grain burner into a new space so we can have more space in the greenhouse for plants. We started the grain burner last night and hope everything up and running and to have trays planted by Friday.
And - as luck would have it, with all of the snow this winter we have had some major damage to one of the greenhouses. Luckily the greenhouse is built in parts so we only need to replace some pieces and not the whole thing.
